Squash, Winter – Red Kuri

This thin-skinned orange squash looks like a small pumpkin without the ridges.  The skin is edible, and its firm creamy yellow flesh has a very delicate and mellow flavour similar to that of cooked chestnuts.  The word “kuri” is Japanese for chestnut.
