Also known as a ground almond, the hati is eaten fresh or dried in West Africa. Fresh, the small tuber can be chewed (the fibre is not usually swallowed) or pressed to obtain a vegetable milk. Dried and crushed, it can replace nut flour. There is no guarantee that you will be able to process them: chances are you’ve chewed them before! The plant creates a small grove of grass and the tubers are harvested in the fall.
