A distant cousin of spinach and a relative of amaranth and quinoa, this plant is highly ornamental and great for edible landscaping. The edible arrow-shaped leaves are a lovely fuchsia color. Prepare as spinach — young leaves raw in salads and cook the mature leaves. The flavour is sharp with subtle salty overtones. Since it can handle heat, you can harvest long after spinach is done.

Spacing
Seed 8 cm (3″) apart. Thin to 23 cm (9″) apart. Plants grow over 1 m (3-4′) tall.

Depth
Plant seeds 1 cm (½”) deep.

Requirements
Full sun and a loamy soil with a pH of 6.1 – 7.5

Germination
Seeds will germinate in 6-21 days.

Pests
Pests are not usually a problem. Supports beneficial insects if allowed to flower (such as syrphid flies, which eat aphid pests).

Timing
Seed as soon as the soil can be worked in the spring and every two weeks after that until late spring, as long as the weather is cool.  Sow again in mid to late August for fall crops. Sow outdoors in early spring, or fall in the south.

Growing
Provide consistent moisture.  Mulch after plants are well established to maintain moisture and suppress weeds.
